Manchego Cheese Recipe from Lanzarote

This is a wonderful dish to serve as a light lunch or as part of a selection of tapas.
Manchego cheese is a strong hard cheese - the closest UK equivalent would be a strong cheddar, and that can be used for this recipe.
Slice the cheese into thin triangles and lay around a large plate. Finely chop a couple of cloves of garlic and sprinkle over the cheese, then drizzle extra virgin olive oil over the top. Put the cheese in the fridge for an hour to let the garlic and olive oil flavour suffuse.
Just before serving, sprinkle with sea salt crystals and basil and then deliver it to the table with hunks of crusty bread.
This goes beautifully with an onion and tomato salad.
